Chicken Rogan Josh
Chicken Rogan Josh is a very simple but tongue drooling Kashmiri dish with no onions,tomatoes and yogurt.....Goes well with Naan,rotis and even kerala puttu and pathiri
Ingredients
- Chicken - 500 gm
- Kashmiri chilli powder - 4 tsp
- Ginger-garlic paste - 1 tbsp
- Fennel powder - 1 tbsp
- Hing powder - a pinch
- Powdered Cinnamon - 1/2 tsp
- Powdered cumin seeds - 1 tsp
- Garam masala - 1 tsp
- Ghee - 3 tbsp
- Curry leaves - 2 or 3 springs
- Salt - as required
Method
- Cut the chicken into small pieces.
- Make a paste out of ingredients 2,3,4 and 5
- Heat ghee in a non-stick kadai.
- Transfer the prepared chilli paste into the kadai.
- Add some water and required salt ,then leave it to cook in low flame.
- Once the chicken is almost done,add cinnamon,cumin and garam masala
- Allow it to be on flame until the gravy thickens.
- Once the gravy is ready sprinkle the curry leaves and turn off the flame.
- Kashmir vs Kerala.......... great combination......loved it!!!!
