Mutton Peralan ( Kerala IsHtyLe)





Ingredients


For Marination
  1. Mutton/Beef - 500 gm
  2. Chilli powder - 1tsp
  3. Pepper Powder- 1tsp
  4. Turmeric powder - 1/4 tsp
  5. Fennel powder-1/2 tsp
  6. Garam masala- 1/2 tsp
  7. Salt-1/2 tsp
For Masala
  1. Onions - 2 nos (finely chopped)
  2. Shallots - 1 cup (crushed)
  3. Ginger-garlic paste - 1 tbsp
  4. Tomato - 1 medium size sliced
  5.  Red chillies (whole) - 4 nos
  6. Turmeric powder- 1/4 tsp
  7. Chilli powder - 1 tbsp
  8. Pepper powder - 1tsp
  9. Coriander powder-2 tbsp
  10. Fennel powder - 1 tsp
  11. Garam masala-1/2 tsp
  12. Coconut milk (thick)- 3/4 cup
  13. Curry Leaves - handful
  14. Sliced coconut pieces - 1/2 cup
  15. Oil

Method


  • Clean mutton under running water.



  •  Marinate mutton with the listed masalas and leave it aside for 30 mins,then cook well until done.




  •  Cut coconut into small pieces.


  •  Heat 2 tbsp oil in a pan,and roast the coconut pieces.


  •  Add sliced onions,red chillies,ginger-garlic paste and saute well.


  • Add the ground shallot paste into the kadai.

                                                

  • Add Turmeric powder,Chilli powder,Pepper powder,Coriander powder,Fennel powder,Garam masala and tomato.Saute well until the powders are cooked well.


  • Transfer the cooked mutton into the kadai and allow it to mix with the masala in low flame for 5 mins.Finally add coconut milk and leave it in simmer flame for another 5 mins until the gravy thickens.


  • Turn Off the flame,sprinkle 2 tspns of oil and  curry leaves.


  •  Serve hot with rice :)

Mutton curry kerala style




Ingredients


  1. Mutton- 2 kg
  2. Onion-half kg
  3. Garlic -2 cloves
  4. Ginger-3 piece
  5. Turmeric powder-1tsp 
  6. Chilly powder4tbsp
  7. Garam masala-1tsp 
  8. Potato-2 nos 
  9. Oil 
  10. Curry leaves
  11. Salt to  taste

Method

  • Heat oil in a pressure cooker.Add ginger garlic paste,onion ,curry leaves and sauté it  until it turns golden brown

  • Add chilly powder,turmeric powder,garam masala and salt ,mix it we'll Turn off the gas while adding the masalas.Don't allow it to burn.Add the mutton pieces to the above masala.Close the lid and cook the mutton pieces for 20minutes(4 or 5 whistles)

  • Mutton curry is ready.Garnish  it with coriander leaves/curry leaves

Mutton ghee roast


Ingredients
  1. Mutton-1/2 kg cut into small pieces
  2. Red chillies-6 nos
  3. Coriander seeds-2tbspn
  4. Methi Seeds-1/2 tspn
  5. Sounf-1tspn
  6. Black Pepper-1tspn
  7. Garlic Cloves-4-5nos
  8. Red food colour-a pinch
  9. Ghee-1/2 cup
  10. Yogurt-2tbspn
  11. Lemon juice-2tspn
  12. Salt-as required
  13. Sugar - a pinch (optional)
  14. curry leaves-a generous bunch
Procedure
       

  • Cut the mutton into small pieces .                         
                           
  • Marinate it  with yogurt,lemon juice, salt and leave it for half an hour
                                                                 
  • Cook the above in a pressure cooker until done.(dont add water)
  • In a non-stick Kadai heat half cup of ghee,and fry the cooked mutton till golden brown.
  • Dry Roast ingredients 2-7 in a non-stick pan
                          
  • Grind them to a smooth paste by adding some water.Also add the red colour and salt to this ground paste.
  • In the kadai add another half cup of the ghee  .
  • Add the ground chilli paste and saute well until the raw smell vanishes.
  • Then add the fried mutton and mix well
  • Cook well in low flame until the masala cover up the meat and turns to a dry one
  • Sprinkle curry leaves and sugar,mix well for 2 mins.
  • Turn off the flame and serve hot.
 

Yummy and spicy mutton ghee roast is now ready to be served with rice or rotis.
