Eggless Sticky Toffee Pudding



Ingredients


For pudding



  1. All purpose flour -1 cup
  2. Dates - 1 cup (seedless)
  3. Sugar- 3/4 cup
  4. Oil - 1/2 cup
  5. Milk - 1/2 cup
  6. Baking powder - 1 tsp
  7. Baking Soda - 1 tsp
  8. Vanilla extract - 1 tsp
  9. Cocoa powder - 2 tbsp
  10. Yogurt - 1 tbsp
  11. Boiling water - 1/2 cup


For Toffee Sauce


  1. Sugar - 2 tbsp
  2. Butter - 50 gm
  3. Water - 1 tbspn 

Method


  • Chop the dates  into small pieces,then pour the boiling water over it,and add baking soda.



  •  Leave it for about an hour until well soaked.


  •  Mash them well and keep it aside.( Use a food processor)


  •  Take a cup of maida in a bowl,add baking powder and cocoa powder to it.


  •  Then add 1/2 a cup of milk and 1/2 a cup oil then mix well.



  •  Add one tbsp of yogurt and the date puree to this pudding mix.



  • Also  add 1 tsp of vanilla extract .


  •  Blend the mix very well.


  •  Transfer the mix into a cake tin lined with aluminum foil.Leave it for 25-30 mins in a preheated oven at 180 degree celsius


  •  Remove the pudding from the oven. Leave  the tin for a few mins, then loosen them well from the sides..



  •  For the toffee sauce,put the sugar and butter in a medium saucepan.



  •   Bring to the boil over a medium heat, stirring all the time, until the sugar has completely dissolved


  •  Stir the mixture for 2-3 mins until it is a rich toffee colour (stir continuously  to make sure it doesn’t burn.).Add 1 tbsp of water if needed.


  •  Drizzle the sauce over the pudding.


  •  When ready to serve, warm the pudding and the sauce. Serve them with ice cream :)
