Eggless Sticky Toffee Pudding
Ingredients
For pudding
- All purpose flour -1 cup
- Dates - 1 cup (seedless)
- Sugar- 3/4 cup
- Oil - 1/2 cup
- Milk - 1/2 cup
- Baking powder - 1 tsp
- Baking Soda - 1 tsp
- Vanilla extract - 1 tsp
- Cocoa powder - 2 tbsp
- Yogurt - 1 tbsp
- Boiling water - 1/2 cup
For Toffee Sauce
- Sugar - 2 tbsp
- Butter - 50 gm
- Water - 1 tbspn
Method
- Chop the dates into small pieces,then pour the boiling water over it,and add baking soda.
- Leave it for about an hour until well soaked.
- Mash them well and keep it aside.( Use a food processor)
- Take a cup of maida in a bowl,add baking powder and cocoa powder to it.
- Then add 1/2 a cup of milk and 1/2 a cup oil then mix well.
- Add one tbsp of yogurt and the date puree to this pudding mix.
- Also add 1 tsp of vanilla extract .
- Transfer the mix into a cake tin lined with aluminum foil.Leave it for 25-30 mins in a preheated oven at 180 degree celsius
- Remove the pudding from the oven. Leave the tin for a few mins, then loosen them well from the sides..
- For the toffee sauce,put the sugar and butter in a medium saucepan.
- Bring to the boil over a medium heat, stirring all the time, until the sugar has completely dissolved
- Stir the mixture for 2-3 mins until it is a rich toffee colour (stir continuously to make sure it doesn’t burn.).Add 1 tbsp of water if needed.
- Drizzle the sauce over the pudding.
- When ready to serve, warm the pudding and the sauce. Serve them with ice cream :)
