Ingredients
- Grated coconut :From 1 coconut
- Green chillies : 15
- Cumin seeds :1tsp
- Tomato :2
- Raw banana: 2
- Drum stick:8
- Carrot : 2
- Snake gourd: medium size
- Yam(chenna): medium size
- Cucumber(vellarika):medium size
- Onion:2
- Small onion: 10
- Curry leaves:as per need
- Oil : 4tbsp coconut oil
Method
- Grind coconut with green chillies (6) and cumin seeds in paste and keep it aside
- Heat oil in a thick bottom vessel ,add vegetables,onion and green chillies(remaining ) cut in to 2, turmeric powder ,salt and cook it on a low flame without adding water(Note:vegetables sliced into small pieces).Drum stick:cut in to2"length pieces,when vegetables are cooked ,add the coconut paste and stir well.When steam comes out , add tomatoes
- Now make a paste with small onion and curry leaves and mix it with coconut oil.Then the add the mix to the aviyal.Remove from the fire and garnish it with curry leaves
