Kerala style Aviyal





Ingredients


  1. Grated coconut :From 1 coconut
  2. Green chillies : 15
  3. Cumin seeds :1tsp
  4. Tomato :2
  5. Raw banana: 2
  6. Drum stick:8
  7. Carrot : 2
  8. Snake gourd: medium size
  9. Yam(chenna): medium size
  10. Cucumber(vellarika):medium size
  11. Onion:2 
  12. Small onion: 10
  13. Curry leaves:as per need
  14. Oil : 4tbsp coconut oil

Method

  • Grind coconut with green chillies (6) and cumin seeds in paste and keep it aside



  • Heat oil in a thick bottom vessel ,add vegetables,onion and green chillies(remaining ) cut in to 2, turmeric powder ,salt and cook it on a low flame without adding water(Note:vegetables sliced into small pieces).Drum stick:cut in to2"length pieces,when vegetables are cooked ,add the coconut paste and stir well.When steam comes out , add tomatoes

  • Now  make a paste with small onion  and curry leaves and mix it with coconut oil.Then the add the mix to the aviyal.Remove from the fire and garnish it with curry leaves
